Stove Top Carrot Spice Oatmeal

Carrot spice oatmeal is an easy, everyday breakfast that will make you feel all warm and fuzzy inside. One pot, simple ingredients, super delicious!

Notes of cinnamon, cardamom and Allspice make this oatmeal reminiscent of carrot cake. Maple syrup and apple sauce naturally sweeten and deepen the flavors.

What is carrot spice oatmeal?

Pumpkin spice is all the rage, but let me introduce you to the humble, sweet, carrot. Like pumpkin, carrots store very well throughout the winter months, given the right conditions. Both veggies pair well with warm, sweet spices such as, cinnamon, cardamom and Allspice. If you are a fan of carrot cake, carrot spice oatmeal will be a delight!

Ingredients needed to make carrot spice oatmeal.

Water, salt and shredded carrots. The shredded carrots are parboiled in salted water to ensure no crunchy bits are in the oatmeal.

Old fashioned rolled oats and oat milk. The texture of rolled oats is best for this recipe. Oat milk is creamy and naturally sweet.

Spices. Warm, sweet flavors that would show up in pies, carrot cake or pumpkin spice. Gather the following: Cinnamon, cardamom and Allspice.

Maple syrup and apple sauce. Smokey, wood fire maple syrup and sweet apple sauce pair very well with the warm spices and nutty flavors.

Almond butter. The small addition of almond butter rounds out sweet and warm flavors while also enhancing the overall texture.

Raisins or dried cranberries. When added to the oatmeal during cooking they plump up and become extra juicy.

Coconut flakes. Top with coconut flakes and nuts if desired. I don’t typically add more nuts since almond butter is included.

How to make carrot spice oatmeal.

  1. Shred carrot with a box grater. Parboil shredded carrots in salted boiling water.
  2. To the water and carrots, add oats, oat milk, all spices, maple syrup, apple sauce, almond butter, raisins (or cranberries).
  3. Over medium/low heat, stir frequently until oatmeal has thickened and becomes creamy.
  4. Top with coconut flakes and more dried fruit, if desired.

Carrot spice oatmeal (for one!)

This oatmeal recipe is for two. However, on a hungry morning I can finish the whole pot. For a single serving, cut the ingredients in half or refrigerate the leftovers. When ready to reheat, splash milk in the oatmeal and stir to rehydrate.

TIP: For extra decadence, combine softened cream cheese with maple syrup and drizzle on top!

Ingredients
  

  • ½ cup water
  • ¼ tsp salt Redmond’s Real Salt
  • ½ cup carrots shredded (1 medium carrot)
  • ½ cup rolled oats
  • cup oat milk
  • ½ tsp cinnamon
  • ¼ tsp cardamom
  • tsp Allspice
  • 2 tbsp +more for drizzling maple syrup
  • 2 tbsp apple sauce
  • 1 tbsp almond butter
  • 2 tbsp raisins or cranberries
  • Coconut flakes for topping

Instructions
 

  • In a medium size pot, bring water to a boil.
  • Add salt and shredded carrots (use a box grater to shred). Simmer until carrots are softened, 2-3 minutes.
  • Add rolled oats, oat milk, spices, maple syrup, apple sauce, almond butter and raisins.
  • Simmer, stirring frequently until creamy. Pour into bowls, drizzle with maple syrup
  • Top with coconut flakes, dried fruit, nuts or cream cheese maple syrup mixture if desired. Simply combine softened cream cheese with maple syrup until desired sweetness is obtained.
